My poor old multimeter doesn't measure sub-volt, non-RF AC voltages, as
is needed for some K2 signal tracing (such as sidetone). Could the RF
probe assembly circuit be modified so that I can use my DC meter to
measure, for example, audio frequency AC?

Yes, they are, and its even worse after the demons get you to order one. They
start putting dreams of the delivery guy handing you the box in your head while
you sleep, which in turn causes you to go to the Elecraft site four times a day

Just got off the phone with Yaesu and they're out of stock on FT-100 knobs
and rings. She said I'd have to special order with a lead time of 4-6

If you are having this message on the K3, then it indicates that the
power supply voltage is less than the menu setting for CONFIG: BAT MIN.
OTOH, if you have a K2 rather than a K3, the switch for the voltage
metering may be in the wrong position.
