Thanks Jeff, I did indeed miss the X11 install (thought it was there,
but should've checked) - however, it still threw the same message
with X11 installed and the display environment variable set - perhaps
I need to re-install denemo, or perhaps one/some of its dependencies?

Did you start denemo form Terminal.app or form an xterm ?
Because X11.app does not read the unix environment.
