I'd like to insert a table into Impress, the same way one inserts a
table into Writer. That is - a plain old table with rows and columns.
Impress lets me insert a table which has a data source connection, or
via the same icon as Writer a spreadsheet, but I don't see a way to add

Sounds like the printer may be set up for letter paper and automatically
splits a legal page into to letter size. Adjust the configuration of
the printer at File/Printer Settings/Paper.
Don't know of a shrink function in OOO, but I've squeezed material
onto one page by adjusting font size
