Up until very recently, X did not provide any way to change the desktop size. 
However, there is now an extension, RandR (Resize and Rotate) which provides 
this capability. It was introduced into XFree86 in late 2002.

XVnc, as far as I know, uses an older base for XFree86 that doesn't include 
the RandR extension.

In any event, this would not fit well into what you want to do - RandR is 
required to provide a list of available screen sizes (and depths); 
unfortunately, for XVnc the range of sizes is (in theory at least) unlimited.

On top of that a few applications would not deal very well with the desktop 
being resized - prior to last year, applications could assume that the size 
never changed. The extension does include handling to make sure that such 
applications don't crash, but they may end up too big if you reduce your 
desktop size.
