This is a very good article covering the main differences, with screenshots.

It all depends on what software you will be using and what hardware you 
wish to use with it. It can be quite tricky to get an old scanner to do 
everything in Vista, for example. However you may find that everything 
you need it for works just fine.

I haven't used it personally much but working in IT, I've had quite a 
few users knocking on my door asking me to install XP on their 
newly-delivered Dell laptops preinstalled with Vista ;-)
