A while ago a few people had preview problems in Encore, myself included.

I presume you are using Premiere Pro for editing.
Try the following:
Finish the video in the editing program so that you do not have to add 
wav files etc in Encore.
Export to MPEG2-DVD with the following selections:
Multiplexer: None
Audio: MPEG
When done you should have the following files
.mpa .m2v .xmp .xmpses Delete the last two
Import the other two as asset into your Encore project and create a timeline
Create a menu and set it as first play.
Link the timeline or the .m2v file to the play button.
Set end action, check project and try to preview.

The above settings work for me. Other settings should!? also work but 
that is
unfortunately not always so with Adobe products.

If you can not get the preview to work try the following before you 
waste too much time.
"Build" a DVD image (iso file) on your HDD and check that one.
If you do not have a player that can play ISO files download the VLC 
Media Player (free).

I make an ISO file first anyway and burn my DVDs from there with Nero.
