i7's and 64 bit OS's go hand in hand IMO, if your still using CS5 though, it will certainly just 'fly' along, even on a 32 bit system.
For HD work the newish NVIDIA range of cards with 'CUDA' support is best, not sure if its just for HD or SD as well. Get as much memory as possible as well, you won't regret it. (12GB seems standard.) Most i7 mobo's have RAID controllers built in as well, RAID 0 (Zero) is best for speed, just make sure everything is backed up regularly if you cannot opt for RAID 5 (0 and 1 together). Either way, get one of these and you are HD ready, pretty future proof really. Never had an issue with onboard sound, the expensive ones just have better components on their boards, but unless your doing pro sound based videos that shouldn't really pose a problem.
