There's nothing stopping them from recording it off the wire and
decrypting it there (if encrypted).

It's already being done, honestly.

I understand you think it's the principle of the thing, but we live in
a day and age where everything we do is tracked and recorded, and
there's really no true way to get away from it. Someone interested
enough could probably real them in almost real-time.
