I've thought that extending an OS in certain directions might be one way to
develop some form of AI.  From the OS class I just took I know there are
information-greedy algorithms possible for scheduling and such which aren't
used now.  (And might not be efficient to use, but the possibility is there.)
And intrusion detection, or intrusion fighting (shades of Gibson's ICE) might
be interesting.  "This is me normally.  Hey, something's happening.  Someone's
trying to take me over!  Fight!  Scream!"

I mean, a multitasking computer already bears a bit of resemblance to a cell
or a mind: multiple independent processes, plus a central process with
representations of the other activity, and of its own.  Not a tight match, but
a provocative one.
