I am not sure I understand completely what you say, there, but perhaps 
the user capacity UI feature we have in the user preferences may help here.

In this each user can set detailed availability information for each day 
of the sprint.

To reach it, log in as that user, and go to "Preferences" (top right 
link bar) and there to the "Team" tab.
