In the use case described by rakko_m and tora, the behaviour of OpenOffice is 
perfectly correct.

In Calc, while you are editing a cell, nothing is changed. The change only 
occurs 
when the edition is validated (typing Enter or click the green check icon).
Proof:
In a new Calc document, in cell A1 put the formula =C1 (and type Enter)
Cell A1 displays 0
Now edit cell C1, and type 123  : cell A1 still displays 0.
Type Enter : now cell A1 displays 123.
A formula or a value is only evaluated when edition is validated. There is no 
modification in a cell being edited, this is not a stable state. You may still 
click 
the red Cancel icon or type Escape key.

There is an equivalent case in Writer:
Menu Format > Character
Change the font : nothing happens until you click OK.
