I use a centralized log server.
For *nix servers, it is easy to do instanteous remote logging of every
request.
for Windows, it is not quite as easy, but doable. Had to get the free
logging agents from the Snare folks for stupid IIS, and kiwi command line
logger for Windows Apache.
It took a lot of playing with formatting of the loggers/web servers and
analog to get all happy in one giant log file, but it is a relief.

It is very good security to keep the access logs on another machine that
won't be effected if the web server is hacked.
But I also keep individual server logs, for careful machine analysis. It
doesn't "cost" much to do so, and greatly assists in problem resolution etc.
