I've actually been seeing similar issues under VirtualBox 4.0.8 r71778 with a virtual quad-core 64-bit Ubuntu 11.04 guest and 64-bit Windows 7 host. However, in my case, the VM seems to kinda-freeze (its hard to describe -- the VM isn't locked up, but it doesn't really respond to most input) for no apparent reason. High memory pressure, or not; high CPU load or not. I haven't had a problem with other guests (Ubuntu 10.11, Arch Linux, RHEL6, etc) though to be honest I haven't been working with them as much recently...
Since I have to reset the VM every-so-often, I've enabled full journaling on the VMs ext4 disks. Perhaps your package manager's files got corrupted when you reset the machine? Also, I'll mirror the comments that 512MB of RAM isn't going to be enough -- my VM was swapping up a storm when compiling with "-j4".
