Hi, I have checked the two config-files and they are OK. (/etc/default/locale and /etc/default/console-setup)
They both have UTF-8 enabled as in your example. The test: echo "J'ai deux frères" | apertium fr-es gives: Tengo dos *fr (immediately followed by the command prompt at the same line, starting with my user name after "r").
