Put the text into a file, 

$ echo "J'ai deux frères." > /tmp/test

Then do:

$ file /tmp/test
/tmp/test: UTF-8 Unicode text

Then try maybe:

$ LANG=sv_SE.UTF-8 echo "J'ai deux frères." > /tmp/test2

and the same.

Then, if you're in gnome-terminal, go to:

 Menu -> Terminal -> Set character set of the terminal 

and make sure it is set to utf-8.
