I'd like to make the case for Spanish-Aragonese: I don't think there
has been an Apertium translator built in the last few years that
hasn't made extensive use of Wikipedia, but the Spanish-Aragonese
translator was built with the specific goal of translating Wikipedia
articles in mind, and for at least the first few months, using
*nothing* but Wikipedia (and Wiktionary) -- in fact, the first piece
of parallel text I had was the welcome message from the Aragonese
Wikipedia :)
