Stephen,
This is a way that would let you switch production server more quickly.
Another way would be to do the following:
1. Install 6.3 on the new server
2. Export/Import def-file on new server
3. Upgrade the server to 7
4. Use rrrChive to move all your data to the new server
5. Test the server
6. Use rrrChive to do an incremental update of the data (15 minutes?)
7. Put the new server into production
