I don't know how you plan to get down south, but if you pass thorough Arizona you'll want to try Joe's Real BBQ (http://www.joesrealbbq.com/). This place has been on many of the cooking channels nationally.

If you are going south down the coast through California then you'll want to pass through Santa Maria where they have some of the best BBQ in the west. I was co-owner of a restaurant in Long Beach that served Santa Maria style BBQ and it was extremely popular. Santa Maria is known for BBQ using rubs rather than sauces, although they have sauces too. They also have unique BBQ beans that you can only find there.
