If you just need different mappings and are OK with the out of box flow, then it's pretty simple because you just have to add/modify approval mappings for groups and individuals. However, the change approval process as a whole is a sum of many different parts which means that configuring each part will need a separate form for you to go in and modify... hence the complexity.
