I haven't done any customizing of the vacation script, but it only sends one
message per day for each sender, and as far as I know, does a very good job
of not responding to lists...

Although IMail has no specific list functionality w.r.t. lists hosted
elsewhere, even old versions only send a single vacation message to each
sender, so it's relatively safe for lists, if not ideal.
