"Backup" mx services are about the easiest thing to set up, thanks to 
round robin dns. Though I would never create a backup but an equal. 
Backup mx servers in the traditional sense never really worked very 
well. Clone your existing email servers and just add them to your mx 
records. If you need it to be on a different physical location, then 
place the server in a colocation. In that case if one or more 
servers/connections fail you will still have the same functionality, 
only the remaining server(s) experience a bit more load. But since it is 
equal to the others it should handle it fine normally.

In other words a backup should not be merely a backup but actively 
participate in email delivery.
