Interesting. To test this theory, I could point assp.local to ASSP from the
postfix server, whereas if I'm able to send emails then - the theory is
correct.

I will test this.

I see this different. I see Exchange sending to Postfix which sends to
ASSP which sends to Postfix.
Postfix does not know about assp.local, so the mail will not get to
ASSP.
