I can alter the headers any way we like. The reason this list is run this way is that it was recommended to prevent mail loops -- i.e. when someone turns on their evil vacation auto-responder that doesn't recognize the List- mail headers. The same way some people's email clients don't see the List-Post: header *cough* *cough*.
