Devices like NAS boxes and Vortexboxes are very good unless one has a very large music library (I'm guessing somewhere around 100,000 songs and above). For these large music libraries a PC (be it Mac, windows or linux) with more memory and processing power than a NAS or Vortexbox is needed. The good thing is that powerful enough PCs are available for very little money (under $300) and sometimes one can be had for free from a friend or relative who is looking to upgrade their current computer.
I'm aware that a NAS or Vortexbox is more energy efficient and these devices should be one's first choice but for large music libraries they just don't have the necessary memory or processing power. As for the sound of the Touch - the sky's the limit, in other words, the better the external DAC the better the sound. Based on what you've written you have more than enough equipment to get a Squeezebox Touch up and running.
