The problem comes when you influence other people based on perceptions which are the result of factors which are probably not relevant to them - for example whether you ate too much pizza or whether blue cables impress you right now.
In contrast, examples of factors other people might find relevant include the sound being emitted by the speakers and the acoustics of the room. The distinction is worth bearing in mind when sharing your perceptions on a one to one basis or on an internet forum. So the point is...blind listening tests are the only means we have to determine for sure whether our perception is based on factors which have only personal relevance or factors which are repeatable by, and therefore of interest to, others. Of course, it is difficult to do blind tests and impractical to base every statement on blind listening! But you asked what the point is and that is the point.
