Could you post the manufacturer and model number of those oscillators?
With that I can look up what they are make a decent guess as to how
good they are.

Actually a very good internal clock is usually the best you can get.
You CAN make a slightly better external clock, but then you have to get
it into the Touch, that almost certainly will eat up any advantage over
a good internal clock.

And good clocks don't have to be very expensive, Crystek makes some
very good ones that are about 15X lower jitter than what comes in the
Touch, and these cost a whopping $2 in singles!

The secret is NOT to pay for things that don't matter. There are a
number of clock parameters that have absolutely nothing to do with the
sound, but cost money to improve. A lot of companies get caught up in
specmanship with these numbers and spend a lot of money on getting
clocks with better numbers in these parameters when they don't need to.
And just to make it fun, certain technologies which get some of these
parameters REALLY small actually make jitter worse, which is what
really matters. Either the designers of these products don't know what
they are doing, or they are deliberately going with smaller numbers to
impress prospective customers, even if it means worse sound. Either way
I tend to steer clear of companies bragging about these numbers in their
adds.

BTW this company looks like they have mostly done it right, but they
are still focusing on parameters that don't matter, at least they have
not used the technology that makes it worse.
