My mom used to do "Vinha d'alhos" and I learned with her in this way:
Red wine, usually; chopped garlic, chopped onios, parsley, chives to marinate any pork or beef in the refrigerator. We also add any other spice that we like, but basically Vinha d'alhos is in that way. All left over wines were saved for doing it.
