DD the (unmounted) disk over to the new machine then grow the filesystem 
to fill the new disk is the way to go if your OS / filesystem supports 
growing filesystems.

Failing that the way to migrate over a few weeks is to set te old server 
to not backuo, set the new one to start backing up and just wait.   Keep 
the old machine around as an archive/  reference for as long as you feel 
it's needed and let the new one build it's own history over time.
