Personally, I do this:
a. For moderately important files, like http.conf, I just chown
myusername the_file and then I BB'Edit it al my leisure. Apache
doesn't really care who's the owner, as long as it can read that
file. Yes, you security types, I know that's not kosher, I promise I
won't do that on my ecommerce server, just on the not-so-sensitive
machines.
b. For files that must have a specific owner, like .ssh/
authorized_keys, I create a bunch of bookmarks in my SFTP client
software (Interarchy in my case, but any that supports the "open in
BBEdit" command will do) -- each one with a different username. E.g.
[EMAIL PROTECTED], [EMAIL PROTECTED], etc.
