You can do it both ways, subversion in itself has no GUI but there
are many applications that provide a GUI to subversion. Personally
I use either the command line or the built-in commands of
applications like BBEdit.
Also, is it possible to run the SVN server on one of your
workstations?
Yes, although I use a linux server.
