I don't know about BBEdit, but TextEdit allows non-contiguous selections while holding down the Command key. You can also select all and then hold the Command key to deselect portions.

However, it's a bit tricky because it seems you can only start a deselection from unselected text. So you can select all, then hold down Command and double-click a word to "punch a hole" in the selection, and then do further deselections from there.

I know, it's convoluted, but it's better than nothing.
