Hmmm... On my system when I control click on an item in Path 
Finder (I use this in preference to Finder) I do see an Open 
With item in the contextual menu that appears. I do have SGI 
installed. But since I have other things installed as well, I 
cannot be certain without more testing whether the Open With 
item I see in contextual menus is due to having SGI running or 
something else running.

Also, while I have seen it reported in several places Snow 
Leopard disables contextual menu plug-in but I believe it is 
more accurate to state the current version of Finder no longer 
supports those plug-ins rather than saying they've been disabled 
by the system.

For example, I have use File Buddy 9.02 on my system which 
installs a contextual menu plug-in that provides several useful 
file manipulation utilities. One of these is the ability to 
replace spaces in filenames with underscores. With Path Finder 
running (Finder not running), I can use this plug-in to change 
filenames as I expect. With Finder running (Path Finder not 
running), the contextual menu item that does the name change 
simply does not appear when I control click on a file.
