I have had this same question. Try this: open a folder as an instaproject. Then create a new project from File>New>Project..., giving it a name and location. Then drag the folder from the instaproject's project sidebar into the new project's sidebar, and close the instaproject. At least that way you don't have to navigate to the folder in order to add it to the new project. Maybe someday there will be a way to create a new project from selected items in an existing project or instaproject, but at least my method is slightly more convenient than just starting from scratch.
