Brix is zero% i.e. Temp 20 Degrees = pH 7.2, ergs 2.32 mS at start of brew 24 hrs later 29 degrees =pH 7.8, ergs 2.53 I yet have not done enough brews to see if this is consistent and I do have some variables to contend with like air temp. My second and third brews have shown similar results. Please note this has been set up as a working operation and is ruled by farmyard measurements.
