I agree on the size of your environment.  We are running BES 4.1.6 with
50 users and are not using full blown SQL.  We have 1 virtual machine
running BES and SQL express without issue.  I am preparing to upgrade to
BES 5.0 (exchange) and think after the upgrade that I will split SQL off
to another box for growth's sake.  

Currently our messages and all performance of the server are very quick
(almost instantaneous for email messages to the handheld)

In such a small environment your not going to benefit much from it. If
you were running the full blown BES with numerous users it would benefit
you, but being your 30 users and under it doesn't provide much of a
benefit and as Art stated it could be what's causing the bottleneck.
