What I personally do is have a 6.5.1 copy running for my SB's at home for stability and have a 6.5.1 and 7.0 also installed on my laptop that I use for development. 7.0 is good enough right now IMO for plugin developers to start looking around and porting stuff. Sure stuff will change, but this way you can make adaptations gradually instead of having to do everything all at once when 7.0 becomes more stable/mainstream.
