Went back to iTunes 7.1.1 on the server, forcibly updated a few dozen offending tracks (including all those Twin Peaks files) by inserting a 40 character AlbumArtist and then putting back the correct string.
Verified there are no ID3v1 tags in the files for good measure... And finally manually deleted SlimServer's database (in the caches folder in Mac OS). Restarted the machine and let SS rebuild everything. Looking good so far. Tags are no longer wonky. Without doing a manual wipe of the DB, an update scan seemed to leave crap in some DB records (which I believe was responsible for the extra "Artist" data for the example I mentioned previously).
