In BibDesk you can drop raw bibtex on the detail window to fill in the fields. If you hold down the Option key while you do that it will overwrite fields.

We won't add an option to view the raw bibtex source. I don't really see the use from the point of view of bibdesk. All raw string values are accessible in the editor. Moreover synchronizing would be a real nightmare.

Having been forced to use WinXP at work for the last few months, I discovered Jabref, which seems to be the best thing out there for Windows, with some nice features, but overall not a patch on BibDesk. BibDesk.  I suspect there was some confusion as to what you were

I  set text in a
Preferences window, but no change. However, opening the file in
TeXShop
produces the usual bib format, so all is well.

If you want to see the underlying BibTeX, you'll have to use a text
editor (TeXShop works for this).  The only way you'll see it in
BibDesk is if your file has a serious error, in which case we show a
window that allows you to edit your file manually and try reloading.
