You even discovered a bug. ALL, FULL and FAST are simply not implemented.

imap on port 143 serves both plain text and SSL under STARTTLS. Many
clients don't know how to use the SSL feature on port 143, so I run both
imaps on port 993 and imap on port 143 for this reason.

It's a matter of opinion, how many holes you'd like to poke in your 
firewall and what clients you use. If you have both services open, it'll 
work for everyone.
