When i send an email, using my IMAP server IP as SMTP IP too, where should I see my "sent" folder ? If you allow plain text connections in the conf file, then insert the "recordio" program in front of bincimap-up in the imap/run file, then restart the imap service, you will get lots of output in your log file when a client connects.
