K, once again, I think I may not have looked close enough.
I found the iTunes list of Triggerable actions in the QS plug-in.  Doh!

May I suggest, if possible, to make the Volume Up/Down be within iTunes 
itself, not system wide.
Since some us an external audio I/O for iTunes, the sound level is now 
controlled by the I/O.
But iTunes could be tuned down within the app itself.  If that makes sense 
.......
