All class combinations are very much playable. Some are easier,
or simpler, than others.

But by all means convert to what ever god you like. If it is not working for you then renounce and convert to another one. The gods that aren't interested have been getting unacceptable sacrifices offered them as part of the pantheon so likely shouldn't even appear on the list.
