I like hand wipe poly from Minwax. You can have it in about three grades of gloss. Sand to a fine grit, tack or vacuum it off carefully then wipe on the finish. The polyurethane protects the wood from nearly everything and it forms a very nice finish, can be layered until you get just the texture you want.
