Hello, I use my hands and body weight. It is less energy intensive and produces less CO2;-)
As I use a long proving period, 1 - 3 days, it is not so necessary to kneed very extensively, just enough and no more. Thus, I have never used a bread machine, usually making the dough from batches of 1.25 kilo of flour, resting it for 2 - 3 hours at room temperature (depending on temperature and humidity). I then usually pop it in the fridge and take it out, chop of a piece, form it, let it rise and bake it at initially high temperatures gradually dropping as the baking proceeds.
