We have already modified 3 Silvias and this Brewtus using Fuji PID and
I found it to be very easy to work with.
Regarding Brewtus setup:
Stock temperature controller is set to 99 deg C and its offset is
pushed to -10. ( I have pictures at the above link showing it)
That effectively set TC to push temperature to 109 deg C.
As a result,  there should be no interference with PID ( assuming PID
is set below 228 deg F)
You may be right about T-type, but the one that I installed has a
range of 0 to 400 deg F and fits nicely in the existing thermowell.
It was also a freebee from the PID seller.

I have also a picture at the above link showing different pumps side
by side for folks who are interested.
