If you bought an off the shelf AKO, it's set up for a refrigerator and the heater will only turn on when it gets above the set point. You need to tell it it's in an oven and then it will work correctly. You can test this by lowering the set point to below room temperature and see if it turns on or just find that setting on the instruction on the instruction sheet. It's setting P0, it needs to be set to 1 for heat. If you don't have the manual. let me know and I'll send it along.
