Knowing how we yell at idiots on canals who come the other way, see something 
in front, panic, and slam into reverse to, 'Put it in forward and turn the 
tiller!'. One can imagine a polar bear on the iceberg yelling this at the 
Titanic as it slammed into reverse.
 
I remember seeing a cartoon once of a queue of people asking about relatives 
and at the head of the queue is a polar bear asking about his relatives on the 
iceberg. I guess the cartoon was not contemporary with the period!

I believe the best turning would have been performed with the center,
turbine driven, prop ahead, probably with port screw astern. The
center prop was the only screw in front of the rudder. Why this didn't
happen I don't know.
