Jan Wagner has an udp/ip packetizer that we have used to stream 8Gbps over plain old Internet.
Using udp/ip makes things easier, if you have constant-size packets you only have to slap some tens of bytes of constant header in front of the payload data. No special packet-catching or decoding are needed, Linux does that quite nicely.
Oops, at the moment we can record to disks at 4-6 Gbps, packet receiving succeeds up to 9 Gbps speeds with both Myrinet and Chelsio 10Gbe boards.
