When I bought my '79 traditional standard rig a couple of years ago, I had a tough enough time sleeping in the V berth alone after the surprising expanse in my previous Catalina 22, plus I'm tall. I saved several ideas to try myself for the following year, then met a handy guy who was new to sailing but eager to learn and planned to be around a while.
After looking over my research, and with his eager assistance, we converted almost the entire interior into nearly double bed size, that goes together in less than 5 minutes. There is even space underneath for the dog.

We replaced the teak trim strips (that hold the cushions in, I guess) with beefier strips (from mahogany he had around), then stained it to look almost almost as nice as the original, and cut notches in it for the removable stringers. We then cut 2 pieces of finished plywood for the "box spring", and used the cushions from the starboard and port berths as the mattress, they turned out to just about fit perfectly in a pinch (this is tough to describe). In the morning, the stringers get stowed, the plywood each fit under a cushion, and the cushions, well, they just go back in place. What bed?
We are considering maybe a high grade inflatable mattress instead of the cushions, but otherwise, it's been great ;-).
I can take photos if you want; we never quite got around to it. My web site still only has photos from the early days, I guess I should put some new ones up. Except sailing season is just about here (once this late snow melts)!!
