Hi Lori. My wife and I did about the same bed arrangement with our boat "Yankee Traveler" except we do not have the draws on the port side as you do so we were able to use five narrow boards ( instead of two) to go across the stringers. We also grooved and pegged the boards and stringers instead of cutting the seat trim. The whole complete assembly was able to fit under the port seat when it was not being used therefore out of site.

FWIW, I'm thinking of using a double-size air mattress, which should fit nicely widthwise. Most are 54 inches, and I measure a 55-inch width of the narrower (port) settee. Lengthwise it may be a bit of a squeeze. Most mattresses are 74 inches, and I measure 70 inches at the short (fore) side of the new berth. I attached a pic of how the inside looks bedless (I left the photo pretty big so you can see detail). If you look closely you can see the cutouts for the stringers with the topping strip. The wide trim strips lengthwise under each berth were replaced with thicker mahogany but level with the berth, with a removable finishing trim that fits in with dowels along the top so there is a lip for the cushions again. I'm planning to visit my boat this weekend for a fix and will take a few photos to put on my somewhat neglected website.
